Taco Tuesday!!!
OK so I don't know about you guys but will and I LOVE taco Tuesday. It can be your traditional tacos or something a little different and lately I have been trying to branch out and try new things when it comes to cooking!
We have always loved eating whole healthy meals but don't get me wrong.....we love the unhealthy stuff too (WHO DOES'NT??). But just like everyone else we have been trying to start our new year off on a healthy note.
Taco Tuesday has always been my favorite, I'm not really sure why? maybe because when I became a wife a very short year ago my cooking skills were.....uhmmm.....limited haha but even before I got married I have always love love loved Mexican food or tacos. If you hear me turn down Mexican food I'm probably not feeling well like seriously guys. Anyway, Most of my New recipes actually come from Pinterest! I know crazy? some things I get from my mom (ok Alot haha) because she has always been a natural cook and I hope someday I can be like her...Here are some Links to my Latest Pinterest cooking Inspirations! I am also typing up for your guys how I prepared some of these recipes because sometimes I do things differently or I add and changes things to work best for us!
Avocado Salsa (also they used salmon in this recipe but I like tilapia)

My new Favorite tilapia recipe has been Blackened Tilapia with Avocado Salsa and Rice.
It is a super simple recipe and It cooks up pretty fast so if you're like me and when you get home from a long work day the last thing you want to do is spend forever prepping and cooking dinner. Its just not my thing, When I get home I truthfully want to throw on comfy clothes and just chill so a quick and easy but healthy and yummy dinner is a GoTO for me!
Here is a couple of my favorites I have made lately for taco night!
______________________________________________________________
Blackened Tilapia
thaw 3-4 tilapia filtes
In a small bowl mix the seasonings together.
1 tsp. Salt
1 tsp. Cumin
1 tsp. Paprika
1 tsp. Onion Powder
1 tsp Pepper
1/2 tsp. Chilli Powder
once that is mixed spread on the fish front and back.
I cook my Tilapia on the stove top on medium-high heat.
cook the fish until flakey and then set on a cutting board to cool and be shredded for tacos!
while my Fish is cooking I make the Avocado Salsa!
___________________________________________________
Avocado Salsa
Two Avocados cubed
A small Red Onion. I only use my judgement with it! I like onion but you don't want it too be too over powering so I just use a little for this!
Half a lime
Cilantro
and Salt!
Mix this all together in a bowl and set aside to top tacos with!
To night I made a new recipe....Homemade Chipotle Sauce.
_____________________________________________________
Chipotle Sauce
1 Cup Sour Cream or plain Yogurt.
1-2 Chipotles
a lime and a dash of salt!
I blended this together in my food processor but If you have a blender I'm sure it works just as well!
These are my GOTO taco night favs. I would love to hear your taco Tuesday favorites if you have them!
Signing off guys.
Love,
-B
